@BlissfulMisery, maybe you could share some other deceptively simple bondage tricks, either here or perhaps in its own non-spanky topic? I'm sure I can't be the only site user who is curious.
While I doubt many people are really all that interested, I suppose I was the one to bring it up so I will go a little more into the subject:
Essentially, most methods of being restrained are merely variations on the same couple of core themes (so it is up to your own interpretation just how much all these methods *really* vary).
More specifically, it comes down to restraining your limbs, since they are what you have the most leverage/mobility from. So if you are (as discussed) trying to limit mobility as much as possible with the fewest amount of *actual* restraints, this will usually take the form of tying the ankles to the wrists in order to have them essentially become useless/force your arms and legs to work against each other.
The obvious classical (and highly effective!) example of this being the hogtie - ankles to wrists over the back. But you can also do this across the front - you mentioned the specific example of being bent over a bar and having the wrists cuffed behind the knees in order to become attached to the bar.
Another method of doing something similar that does not require a horizontal bar would be to use a chair - bend over the back of a chair and put your hands through either the slats/space between the back and the seat (obviously only some types of chair allow for this). Then have your hands cuffed behind the knees the same way, or tied with rope to your legs. Essentially entwines/traps you with the chair and the natural inclination/most comfortable position is to stay bent awkwardly over the chair. To become further immobilized, can then have your ankles tied to the chair legs, but technically that is cheating if trying to use the minimal amount of restraints
Other variations on this theme (this ties back to what I said about these being similar to each other if you look at it closely) would be being locked into a spreader bar that has wrist cuffs - can be done either standing bent over, or while sitting and bending double. Either way it drastically limits your mobility, although obviously the 'sitting' version is way more comfortable.
Or, the simplest version of this sort of thing would be to again, sit down, bend forward, and have your wrists handcuffed or rope tied to your ankles. This is more effective if it is opposites, ie left wrist to right ankle and vise versa, although that results in a bit more of a 'pretzel' tie

This can also be done laying on your back, with folding your legs up towards your wrists instead of the other way around, which (to tie back to the actual topic) makes for a very humiliating and painful spanking position (to very briefly summarize, this is more painful due to the way your muscles are stretched plus your orientation causing the strokes to tend to fall differently).
As for methods that do not involve 'wrists to ankles', well you already mentioned the main one: the strappado position. An intense enough strappado (ie the rope pulling your arms high enough) can effectively prevent you from being able to move at all despite your legs being ostensibly free.
